Not every vegetable has to be harvested before the first frost. There are some types of vegetables that also tolerate frost without any problems. If you want to harvest your winter vegetables, you should consider a few things.
Not every variety is hardy
The kale is certainly the first thing that comes to mind. It is very robust and tastes even better when harvested during a frosty period. The reason: the vegetables store sugar. But kale isn't the only vegetable that can provide winter vitamins. Brussels sprouts, savoy cabbage, leeks and parsnips as well as salsify don't mind frost.
The ground should not freeze through
However, you should find out beforehand, as not every variety is hardy. Even if these types of vegetables are not sensitive to frost, the ground should not freeze through if possible. This cannot happen if you put a layer of mulch on the soil. This should be at least 10 centimeters thick. This protects the soil and the plants.
And another tip:
If you add a layer of mature compost to the mulch, you can look forward to he althy plants and tasty vegetables. Winter-hardy vegetables also have the advantage that the garden is not exposed during the winter.
