Lychees are especially delicious when they are fresh. To preserve their flavor for longer, you can freeze them.
Lychees have long since ceased to be exotic in German fruit baskets. After all, you can now find the fruit with the red prickly skin in almost every supermarket. However, many only know lychees from the can. It's a pity really, because here they primarily taste sweet and they're also often a bit soggy. So remember: fresh lychees taste far better than the canned version.» Reading tip: Store lychees correctly - this is how the exotic fruits stay fresh
Now, if you're a true fan of these little fruits and want to enjoy them all year round, you don't necessarily have to resort to canned lychees unless fresh ones are available in stores. Finally, you can also easily freeze fresh lychees. So you never have to resort to canned goods.
How to Freeze Lychees Properly
If you want to freeze lychees, make sure when you buy them that you only take fresh fruit with you. You can recognize good quality, for example, by a bright pink shell without dents or holes. If you have the opportunity to try a lychee, then do so, because the fruits are often harvested while they are still green and then do not taste particularly aromatic. Lychees do not ripen after all.
Once the lychees have been purchased, you can prepare to freeze them. First of all, you need to peel the small fruits. To do this, lightly score the red peel with a knife and then peel off the peel. You can also gently squeeze the fruit out. If you want, you can now remove the inedible core. Otherwise you have to do this after defrosting. Then put the peeled lychees in freezer containers or bags and then put them in the freezer.
➤ Our tip: If you want to make sure that the fruit doesn't freeze into a large lump, we recommend placing the lychees next to each other on a plate or platter and put them in the freezer for about 10 minutesto deliver. This way the fruit is already slightly frozen and doesn't stick together in the freezer bag when you transfer it from the plate to the freezer bag.
