The seeds of the small fruits can usually be eaten without any problems. In some cases, however, it makes sense to remove them.
Currants are extremely he althy and also delicious. If you want to use them to make jam or jelly, you have to deseed them. There are two easy ways to do this. These are summarized as follows:- Juicing
- Passing
Both methods involve a certain amount of effort, but bring the desired result.
Juicing redcurrants
» Juicing in the machine
The juicing of currants is often necessary if, for example, jelly or jam is to be prepared from the fruit.
Today there are special juicers into which the currants can be placed after they have been washed and de-stemmed. The machine squeezes the juice from the fruit and ejects the pits into a separate container.
Unfortunately, cores still get through the machine from time to time. In this case, it is advisable to pass the juice through a particularly fine-mesh sieve after treatment. This allows the juice to drain off and the seeds remain in the sieve.
» Juicing the traditional way
If you want to juice your currants the traditional way, you have to do it a little differently. This requires the following:
Step | Explanation |
---|---|
Step 1 | First wash and stem the currants |
Step 2 | Put currants in a saucepan |
Step 3 | For each kilogram of currants, add 125 milliliters of water and 50 grams of sugar to the pot |
Step 4 | Boil currants |
Step 5 | Remove the pot from the heat and pour the mixture into a cheesecloth |
Step 6 | place over a bowl overnight to allow juice to drain from cloth into bowl |
The traditional method is of course particularly useful when it is already known that the juice will be needed for jelly.
» Juice with steam
In addition to the methods already mentioned, there is a third method for juicing currants and removing their pits from them.
A steam extractor is used for this:
- The bottom container contains water that is brought to a boil.
- The middle bin is directly above and is empty.
- Fruit and sugar, on the other hand, are placed in a sieve as the top tier.
- Thanks to the steam, the fruit will soften and the juice will drip into the middle container. Ideally, this even has an extension to which a hose is attached. In this way, the juice can be easily filled into a container.
Currant Pass
» Pass with the fleet lotte
The Fleet Lotte is a helpful kitchen utensil that can be helpful when pitting currants. This is a container in which the currants are placed and rotated through various perforated discs using a crank. The pulp softens as a result of the treatment and the juice can drain off. Meanwhile, the cores remain in the fleet lotte.
Working with this kitchen utensil is very easy to do. Depending on which disk is used in the device, however, cores can still get through. It is therefore advisable to check the juice again afterwards.
» Pass through a sieve
Since currants are very soft, it is also a good idea to strain them. All you need is a sieve with a very fine mesh.
After washing and hulling, the currants are placed in the sieve and treated with a fork. A container must be set up under the sieve beforehand, into which the juice can drain during processing.
