In summer fresh quark cakes are more digestible than heavy cream cakes. For example, how about a kiwi quark cake without baking?

Now you're probably asking yourself how that fits together, after all it's well known that kiwi fruit in combination with dairy products causes bitter substances to develop. However, there is a very simple trick you can use to prevent this problem. Before you put the kiwi slices on the cake, you need to blanch them so that the enzyme "actinidin" is destroyed. Then nothing stands in the way of a delicious cake feast.
Ingredients:
➤ for the dough you need:
- 250 g ladyfingers
- 150 g butter
➤ for the topping you need:
- 500 g quark
- 150 g sugar
- 375 ml cream
- 2 cl orange liqueur
- 1 pt. vanilla sugar
- 1 point gelatine
- approx. 5 kiwis
Preparation:
Step 1: prepare and chill the base
Put the biscuits in a freezer bag and crumble finely with a rolling pin. Meanwhile, melt the butter in the saucepan. Then mix both together and press into the bottom of a greased springform pan. Then refrigerate.
Step 2: prepare the quark mixture
Mix the quark with the sugar and the orange liqueur. Then whip the cream until stiff and drizzle in the vanilla sugar. Then fold the whipped cream into the quark mixture. Now dissolve the gelatine and fold it into the quark mass. Then you can spread them on the chilled and put in the fridge until a solid mass is formed.
Step 3: Top the cake with kiwis
Just before serving, peel the kiwis andcut them into slices. Pour boiling water over them and let them drain. You can then place the drained kiwi slices on the cake as you wish.
Step 4: Decorate the cake as you like
Decorate the cake a little more. For example, put strawberries in the middle for a touch of color. Or decorate the edge of the cake with chopped candied kiwis. Of course, chocolate chips also work. There are no limits to your imagination.
