Tip 1 - pay attention to quality & freshness when shopping:

Logically, the fresher the tuber, the longer it will keep. Therefore, it is best to make sure when you go shopping that the ginger is firm and heavy in your hand. Always leave soft tubers with wrinkled skin where they are. Moist spots on the bulb also indicate that the ginger will not last very long.

Tip 2 - Store ginger in the fridge:

It is best to store fresh ginger in the fridge, because at room temperature it quickly becomes fibrous and dries out. You shouldn't just put the tubers in the fridge, though. You must store it airtight and tightly closed. You can either wrap it up and put it in a tin or in a zippered freezer bag. You can also put it in a paper bag. Stored like this, ginger will keep in the fridge for up to three weeks.
