Step by step instructions for preserving carrots
Step 1: Clean the carrots
Especially when the carrots come from your own garden, a lot of dirt often sticks to them. Therefore, they are first thoroughly cleaned under running water and then removed from the shell with a vegetable peeler. Remove the ends and immediately place the carrots in a bowl of water. That way they keep their beautiful colour.
Step 2: Prepare the jars
Rinse the preserving jars carefully with hot water and have the appropriate sealing rings ready.
Step 3: Prepare the carrots
Take the carrots out of the water and cut them into cubes or slices. You can also completely preserve the baby carrots. It is best to blanch the carrots for two minutes, then they will keep longer. You can also par-cook them for a maximum of five minutes. In any case, the vegetables must be rinsed with cold water immediately afterwards.
Step 4: Heat the water
You can preserving in the oven, in a water bath or in a special preserving pot. You should preheat the water to 80 degrees now.
Step 5: Put the carrots in the jars
After draining, place the blanched carrots in the prepared jars. Now s alted water is boiled and the filled glasses are filled with it. However, you should leave about two centimeters of space up to the rim of the glasses.

Step 6: Increase water temperature
Before you start closing the jars, the temperature of the water is increased so that a temperature of 100 degrees is reached for boiling. In any case, the water must be so high that the glasses are completely covered.
Step 7: Close the jars
After filling the jars, place the rubber seals on the rims and close them carefully with the lid.
Step 8: Cooking Duration
How long you boil the carrots depends on several factors. With young carrots that you put whole in the jars, you have to reckon with a good two hours. For diced carrots, about 90 minutes is usually sufficient. After the time has elapsed, leave the glasses in the water for a while. Then take them out and put a towel over them.
Although canned carrots keep for a very long time, you should eat them within 12 months!
