» Basic Recipe for Battered Peanuts
Ingredients:
- 400 - 500 g shelled peanuts
- 1 egg white
- S alt
- a pinch of sugar
- Spices to taste
Preparation:
Place the shelled peanuts on a baking sheet lined with parchment paper, making sure they are not on top of each other. This is the only way they can brown or roast evenly. Then bake them at 180°C top/bottom heat for about 20 minutes until golden brown. Then let the finished peanuts cool down a bit so that the dough coat keeps well.
While the nuts are in the oven, beat the egg whites until stiff and fold in the spices (e.g. curry powder, paprika powder, chilli powder, cayenne pepper or dried herbs). Then add the cooled peanuts to the egg white mixture and mix so that all the nuts are well coated. Then put the nuts back on the baking sheet and let them brown in the oven until the shell is crispy brown. Turn the nuts from time to time and separate them so that they don't stick together and brown evenly.
