➤ Recipe 1 - Lamb's Lettuce Cream Soup

Ingredients:

• 250 g lamb's lettuce
• 3 shallots
• 2 tbsp butter
• 2 cloves of garlic
• 1 potato
• s alt
• Pepper
• Nutmeg• Zest of 1 unwaxed lemon
• 1 bay leaf
• 500 ml stock
• 200 ml cream
• 1 pinch of sugar
• 1 squeeze of lemon juice
• 50 g bacon strips

Preparation:

  1. Wash lamb's lettuce, blanch in s alted water and then roughly chop. Fry the strips of bacon at the same time.
  2. Dice the shallots finely and sauté in the hot butter. Then add the chopped garlic.
  3. Add a raw, finely chopped potato, the broth, some s alt, pepper, nutmeg and the piece of lemon zest.
  4. Boil everything until soft, remove lemon zest and bay leaf, add cream, sugar, lemon and s alt and puree the soup.

Ingredients:

• 125 g lamb's lettuce
• 3 shallots
• 1 tbspbutter
• 250 ml white wine
• 400 ml meat stock
• 200 ml sweet cream • 2 egg yolks
• Nutmeg
• S alt
• Seasoning
• 2 slices of toast
• 2 tbsp pumpkin seeds

Preparation:

  1. Wash lamb's lettuce, drain and then roughly chop.

Preparation:
