It can be prepared in so many different ways. For example, you can conjure up a pesto from the lamb's lettuce or prepare it as a soup.
Yes, you read that right. You can also make a soup from lamb's lettuce. This is easy, usually goes very quickly and is really a very good change from pumpkin soup, tomato soup and the like. ➤ Recipe 1 - Lamb's Lettuce Cream Soup
Ingredients:
• 250 g lamb's lettuce• 3 shallots
• 2 tbsp butter
• 2 cloves of garlic
• 1 potato
• s alt
• Pepper
• Nutmeg• Zest of 1 unwaxed lemon
• 1 bay leaf
• 500 ml stock
• 200 ml cream
• 1 pinch of sugar
• 1 squeeze of lemon juice
• 50 g bacon strips
Preparation:
- Wash lamb's lettuce, blanch in s alted water and then roughly chop. Fry the strips of bacon at the same time.
- Dice the shallots finely and sauté in the hot butter. Then add the chopped garlic.
- Add a raw, finely chopped potato, the broth, some s alt, pepper, nutmeg and the piece of lemon zest.
- Boil everything until soft, remove lemon zest and bay leaf, add cream, sugar, lemon and s alt and puree the soup.
- Now serve the soup immediately with the crumbled bacon, as the lemon will turn it gray after a while.
Tip: If you make the soup ahead of time and plan to serve later, add the cream, sugar, lemon and s alt just before serving.
➤ Recipe 2 - Lamb's Lettuce Soup with Croutons
Ingredients:
• 125 g lamb's lettuce• 3 shallots
• 1 tbspbutter
• 250 ml white wine
• 400 ml meat stock
• 200 ml sweet cream • 2 egg yolks
• Nutmeg
• S alt
• Seasoning
• 2 slices of toast
• 2 tbsp pumpkin seeds
Preparation:
- Wash lamb's lettuce, drain and then roughly chop.
- Finely chop the shallots and sauté in hot fat. Then add the lamb's lettuce and continue cooking for a minute.
- Now pour in the white wine and the meat stock, season and let everything cook for 10 minutes.
- Whisk the cream with nutmeg and egg yolk and then stir into the hot soup. Important: Don't let the soup boil anymore!
- Cut the toast into small cubes and toast in the pan. Then roast the pumpkin seeds. Then garnish the soup with it.

• Ingredients for the soup:•1 onion
•50 g butter
•400 g potatoes
•200 g lamb's lettuce
•750 g vegetable stock
• 280 g sour cream
•s alt
•black pepper• Ingredients for the Bruschetta:
•Bread or baguette
•Olive oil
•1 large ball of mozzarella
•4 large tomatoes
•S alt
•Pepper
•Basil
Preparation:
- Chop the onion in the mixing bowl for 5 seconds on speed 5.
- Add butter and sauté 2 minutes (Varoma) on speed 2.
- Cut the potatoes into large pieces, add them and use the spatula to chop them up for 20 seconds on speed 4. The potato ensures that the soup binds well.
- Add the lamb's lettuce and the vegetable stock and cook for 25 minutes at 100°C on speed 2. Then puree the soup for 15 seconds on speed 8.
- Add the sour cream, season with the spices and then mix again for 10 seconds on speed 3.
- Slice the bread.
- Dice the mozzarella and the tomatoes, chop the basil and mix everything together. Then add some olive oil and season with s alt and pepper.
- Spread the mixture over the bread slices, cover each with a slice of mozzarella, place in the oven and leave in until the mozzarella has melted.
