Let's go!
Celery schnitzel not only suitable for vegans
➔ Ingredients:
For 4 people you need the following ingredients:
- 1- 2 celeriac bulbs, depending on the size of the bulb
- approx. 200 g breadcrumbs
- 1 - 2 eggs
- approx. 150 g flour
- 2 tablespoons milk or cream
- S alt and Pepper
➔ Preparation:
Step 1:
First, peel the celeriac and cut into slices about 1 - 1.5 cm thick. Meanwhile, boil water with a little s alt in a saucepan and then add the slices. They stay here for about three minutes. After this time, remove the celery slices and let them drain in a colander.
Tip: If you like, you can season the celery slices with s alt and pepper at this point - just like the normal schnitzel. However, we recommend seasoning the egg instead of the celery.
Step 2:
Once the celery slices have drained well, you can bread them. Prepare three soup plates or shallow bowls.
» Bowl 1: Flour
» Bowl 2: Whisked egg (seasoned with s alt and pepper)
» Bowl 3: Breadcrumbs
Roll each slice of celery on both sides, first in flour, then in egg and finally in breadcrumbs.
Caution: You should follow the order, otherwise the breading would not hold.
Step 3:
Once all the slices are breaded, heat some oil or clarified butter in a pan. When the fat is hot enough, add the celery shreds andfry them golden brown. As with normal schnitzel, about 4 to 5 minutes per side should be enough.
