In order to process rose hips, they must first be freed from the inner core. However, with a few tricks, this is easily doable.
Fortunately, there isn't just one universal tip on how best to gut a rose hip. In principle, the following procedures can be mentioned:
- Slicing
- Boil
- Fleet Lotte
All three variants have their advantages and disadvantages when pitting the rose hips. Which variant you ultimately decide on should depend on how you want to use the fruit.
How to easily core rose hips
❍ Option 1 - Cut the rose hips:
It is important to be careful with this variant. It is not for nothing that children call the inside of the rose hip "itching powder". There are numerous hairs on the seeds that cause itching when they come into contact with the skin. It is therefore always advisable to wear gloves when decoring. You should also provide a bowl of water so that you can wash your hands immediately if you touch them. In order to remove the cores without causing injuries, it is best to proceed as follows:
Step 1:
First cut off the tip of the calyx of the rosehip.
Step 2:
Now halve the fruit lengthwise.
Step 3:
Use a spatula or small spoon to remove the seeds.
Step 4:
Rinse the two halves of the rosehip before further processing.
Step 5:
Now you can simply process the fruit.
❍ Option 2 - Boil rose hips:
Boiling the rosehips is the easiest option for removing the pits, for example if you want to cook rosehip jam yourself. Ideally, you should proceed as follows:
Step 1:
Rinse fruit thoroughly under running water.
Step 2:
Place the hips in a saucepan and fill with water to cover the hips.
Step 3:
Boil and, depending on the size of the rosehips, about a little over a low heatsimmer for half an hour.
Step 4:
Remove the pot from the heat and mash everything with a potato masher.
Step 5:
The mass is now passed through a coarse sieve. A fork will help smooth the mush along the trellis.
Step 6:
To remove the hairs from the rose hips, the mass is passed through again.
Step 7:
The mush can then be processed into jam or other dishes.
❍ Possibility 3 - core removal using Fleet Lotte:
The removal of the cores using the Fleet Lotte can be a little special, as it is important to set it up correctly at first. This always requires a bit of finesse, but makes working with the rose hips a lot easier. You first have to find the right perforated disk for the Lotte fleet. However, here is a tip that can help: if the rosehip puree is too firm to be turned through the mill or the liquor, simply add a little water to the mass.
The disadvantage of this method, however, is that the hairs and the remains of the cores remain in the mass if you do not pass them before further processing. It's not necessarily to everyone's taste.
Important: Always filter out hairs
By the way, the hairs on the seeds don't just stick to the skin and cause itching. If you are a little more sensitive, you can even feel it in your throat. It is therefore always advisable to filter out as much hair as possible from the crowd.
