Fried potatoes are one of the most popular potato dishes in Germany, along with fries. They often always taste particularly delicious somewhere else. But you can also do it alone. Basically, fried potatoes are not that difficult to prepare. You just have to know how.It's easy to go wrong with fried potatoes. Then, in the worst case, you end up with a mushy potato mass that has no roasted aromas and is not exactly visually appealing. We have therefore compiled the points that are really important when preparing fried potatoes.
General information on preparing fried potatoes
You can serve the fried potatoes with a wide variety of dishes. They go particularly well with fried eggs, schnitzel or fish. They can be made from either raw or cooked potatoes.
If you have leftover jacket potatoes from the day before, you can also use them for fried potatoes. It is then up to you whether you season the fried potatoes with s alt and pepper or add onions or bacon.
No matter what you finally decide, the be-all and end-all is that you cut the potatoes into slices of the same thickness. In addition, never too many potatoes should end up in the pan. If necessary, you should sear in several stages.
Onions and bacon should never be put in the pan right at the start.
Preparation with boiled potatoes
If you opt for fried potatoes made from boiled potatoes, you should definitely opt for waxy varieties. The result will be best if you cook them al dente the day before. Leftover jacket potatoes are also a good alternative.
Instructions
- Cut the potatoes into evenly sized slices. An egg slicer is perfect for this. If you want to add onions and bacon, you should dice both finely.
» Tip: The fried potatoes are even better if you fry the onions and bacon separately first.
- You can either use oil to fry the potatoes, preferably rapeseed, olive or sunflower oil, or you can use lard. First heat a coated pan or a heavy iron pan and only then add the fat. When this is hot enough, you can add the potato slices to the pan.
- Only when the potatoes have turned golden brown on one side, turn them very carefully with a spatula to the other side. Don't stir the pan too much.
- When the potatoes are done roasting, you can also add onions and bacon. Finally, season with s alt and pepper and you're done!
Fried potatoes made from raw potatoes
Fried potatoes can be made not only from boiled potatoes, but also from raw ones. In this case, too, it should be waxy varieties.
Instructions
- Either slice the potatoes thinly or cut them into cubes about 1 cm.
- As already described above, first the pan is heated, then the fat is added and finally the potato slices go into the pan.
- When preparing raw potatoes, however, it is important that the fat does not get too hot. Therefore, a mixture of olive oil and butter is also recommended. There should not be too large a quantity of potatoes in the pan, it is better to fry them in several portions. Fry the potatoes over medium heat until lightly browned.
- You can expect an average roasting time of around 30 minutes. If you want to add onions and bacon, add these ingredients after half an hour.
- Fry everything for another 10 minutes and turn the ingredients a few times during this time. Finally, the fried potatoes only need to be seasoned with s alt and pepper.
