Celery soup - tasty and he althy
If you want to cook a celery soup, you need the following ingredients for the basic recipe:
- 1 - 2 bulbs of celery (as a starter 1, as a main course 2 bulbs)
- 1 - 2 shallots
- 500 - 750 ml stock (chicken stock or vegetable stock)
- 100 ml cream
- 1 sprig of thyme
- 1 bay leaf
- some nutmeg
Preparation:

Cut the shallots and peeled celery into small cubes. Then briefly sauté the onions in a tablespoon of butter and then add the celery. Pour in the broth and then add the thyme and the bay leaf. Let this mixture simmer for about 15 minutes until the celery is soft.

When the celery has reached a soft consistency, you can remove the bay leaf and thyme and puree the soup.

Bring the soup to the boil again and season with s alt and pepper. A pinch of nutmeg adds a special note.
