Admittedly, when I first heard about a cauliflower crust in connection with a pizza, I just thought "That can't taste good". I am an absolute pizza fan and love the crispy base. And that should now be replaced by cauliflower?! Well I don't really know. But I wouldn't be me if I hadn't at least tried it out of curiosity.
Not everyone knows how to make such a cauliflower crust. That's why you should definitely watch Esslust's how-to video. With the really detailed instructions, you are guaranteed to succeed with the floor. How you then top the pizza is up to you. The video shows you a vegetarian low-carb version. I did the same for my first try. And what should I say? It really is incredibly delicious. I never thought cauliflower could taste so good on a pizza crust.
» My tip: Cauliflower often smells a bit musty. That doesn't have to mean the cabbage is bad. Just add some lemon juice to the cooking water. The smell dissipates and leaves the cauliflower its white colour.
