Even the Maya knew and valued chia seeds and in many South American countries they are still one of the most popular ingredients for energy bars, puddings and mueslis. The small grains are real power and vitamin packages and are full of fiber, proteins and magnesium. With their numerous vital ingredients, they contribute to a balanced, he althy diet and are therefore also very popular with vegetarians and vegans.The good thing: Chia seeds can be processed in many different ways. You can make e.g. muesli, pancakes or chia jam out of it. There are also some recipes for chia pudding that can be prepared with both cow's milk and vegan alternatives. Chia pudding is also an ideal dessert for anyone who wants to do without animal products completely.
Chia Pudding Recipe
The basic recipe for chia pudding is simple and not a problem even for inexperienced cooks. The good thing: the pudding keeps in the fridge for up to a week and is suitable both as a sweet breakfast and as a snack in between. With its high content of omega-3 fatty acids, calcium and vitamins, it not only provides the body with excellent nutrition, it also keeps you full for longer.
Ingredients:
For a large batch of chia pudding you will need:
- 3 - 4 tablespoons chia seeds
- 200 ml milk or rice milk, oat milk or soy milk
- 1 tablespoon sugar, maple syrup or agave syrup
Preparation:
Put the chia seeds together with the sweetener in a bowl and stir. Then pour in the milk or the vegan milk substitute and let the mixture swell until it has a pudding-like consistency. The seeds form a gel with the liquid and thicken. But since this can take quite a while, it is best to let the pudding soak overnight. That's it. The pudding is ready after swelling.

You can of course also use the basic recipestill vary. For example, you can:
- add 3 tablespoons of grated chocolate to the seeds for a chocolate pudding
- Add fresh fruit such as pineapple, bananas, oranges or peaches to the mixture
