Potato chips are delicious, but unfortunately also very high in calories. Aubergine chips, on the other hand, are much he althier and at least as tasty.
In Arabic countries, aubergine chips are a classic appetizer and are also eaten as a snack. With us, on the other hand, they are rarely on the table. Aubergine chips are so delicious and, above all, quick to prepare. They are also a he althy and tasty alternative to potato chips, peanuts and the like. Making them yourself is also very easy. You can use either a frying pan or the oven.
Ingredients for eggplant chips:
- 1 - 2 eggplants
- a little sunflower oil
- Juice of one lemon
- pepper
- S alt
- some flour
Preparation in the pan:
1Remove the stalks of the aubergines and then cut the aubergines into slices about 5 mm thick. The discs must then drain. To do this, s alt them and put them in a colander. Leave them there for about 30 minutes.
2Dab the aubergine slices with some kitchen paper after draining and dredge them in flour like cutlets. Lightly tap off excess flour.
3Heat some oil in a pan and fry the slices in it until golden brown. You have to be careful not to fry too many slices at once so they cook through and brown evenly.
4After about 3 minutes the slices are ready. All you have to do is place them on some kitchen paper to drain and then season with a little s alt, pepper and lemon juice.
Preparation in the oven:
1Aubergine chips can also be prepared in the oven. To do this, first s alt the slices, drain them and dab them with kitchen paper.
2Then place the slices on a baking tray lined with baking paper, brush lightly with a little olive or sunflower oil and add a little more s alt.
3Then bake the aubergine slices in a preheated oven at 120°C for about 20 minutes until golden brown. If you want the aubergine chips to be extra crispy, leave them in the oven for another 5 to 10 minutes.
4After cooling, theEggplant chips aromatic and crispy. But you can still refine them with spices according to your taste.
