Chia seeds have been considered a superfood for a few years now. So why not just bake cookies from the he althy seeds? Here are two delicious recipe suggestions.
Sweets and cookies are not usually considered he althy foods. Chia biscuits are an exception to this. The seeds of the South American chia plant are full of vitamins, fiber and proteins and provide valuable omega-3 and omega-6 fatty acids (see chia seeds nutritional values - what's in the superfood). Because of this, they are particularly popular with vegetarians and vegans, who often use them to prepare chia pudding. But it's also worth trying chia seeds for everyone else, and if they are served as delicious biscuits, then even more so.There are now many recipes for chia biscuits that promise enjoyment for everyone, whether vegan or not, and are quick and easy to prepare. These include these two recipe variants, for example.
❖ Recipe 1 - Easy Chia Cookies
Ingredients:
- 200 g flour
- 80 g sugar
- 2 tablespoons chia seeds
- 1 tablespoon vanilla sugar
- 100 g margarine
Preparation:
Knead all the ingredients into a shortcrust pastry, roll out on a floured work surface to a thickness of approx. 3 to 4 mm, cut out shapes and bake in a preheated oven at 160°C for approx. 10 minutes until light yellow.
❖ Recipe 2 - Chocolate Chia Cookies with Coconut
Ingredients:
- 70 g tender rolled oats
- 2 bananas
- 40 g dark chocolate
- 1 - 2 tablespoons raisins
- 1 - 2 tablespoons grated coconut
- 3 tablespoons chia gel
Preparation:
First of all, you need to make the chia gel. To do this, mix the chia seeds with water or milk or milk substitute in a ratio of 1:6 (i.e. 3 tablespoons of chia seeds with 18 tablespoons of liquid) and then refrigerate for two hours until a kind of gel forms.
Mash the bananas with a fork and add the chopped chocolate, then all the remaining ingredients. Place the mixture with a spoon on a baking tray lined with baking paper and bake in a preheated oven at 160°C for approx. 15 minutes.
