Peel and dice the onion. Sauté them together with the diced chard stalks, a pinch of sugar and 2 tablespoons of oil. Then add the chard strips and steam everything together again. Now season with pepper, s alt and nutmeg.
» Step 3:
Toast the pine nuts in a fat-free pan and add to the chard mixture. Then whisk the milk, cream and eggs together and stir in about 60 g mountain cheese. Season everything together again with pepper, s alt and nutmeg.
» Step 4:
Now roll out the round sheet of puff pastry to the desired size and place in a tart pan. Gently press the dough around the edges of the mold and trim off the excess dough. Then spread the chard mixture over the puff pastry. Pour the prepared egg white on top. Finally, sprinkle 40 g mountain cheese on top.
Place the quiche in the preheated oven at 200 degrees Celsius (top and bottom heat) for around 10 minutes on the bottom of thebake in the oven. Then continue baking for about 25 minutes on the lower rack. Leave the quiche in the oven until it has a golden brown surface.
