Zucchini are very popular in the kitchen and can be prepared in many different ways. A pesto made from this fruit, which is related to the pumpkin, refines pasta dishes and hearty dishes from the grill.

But you can also prepare a delicious pesto with zucchini. It not only tastes great with pasta, but also excellent with roasted bread, baguette or roasted meat. Simply a pleasure for the spoiled palate.

Quick zucchini pesto with lots of flavor

Ingredients:

  • 600 g courgettes
  • approx. 150 ml olive oil
  • 50 g grated parmesan
  • 2 garlic cloves, roughly chopped
  • s alt, pepper
  • 1 tablespoon lemon juice
  • optional 50 g roasted flaked almonds or pine nuts

➥ Preparation:

❶ First cut the courgettes lengthwise. Then place the fruit halves, cut side down, on a baking sheet lined with parchment paper. Now brush the courgettes with a little olive oil and let them simmer in the oven at 180°C for about 15 minutes.

❷ If you want to use almonds or pine nuts for your pesto, roast them in a pan without fat until golden brown. Then just let it cool down a bit.

❸ The cooled courgettes are now cut into pieces. Put this in a mixing bowl or blender along with the other ingredients. Now puree this mixture until you get a creamy pesto.

» Tip: If the sauce is a little too thin for you, you can add a little Parmesan. If it is too thick, soften it with a little olive oil.

If you want to enjoy the pesto right away, you can now serve it in a bowl. You can also fill it in jars with a screw cap. Finally, cover the pesto in the jar with olive oil. It will keep in the fridge like this for up to a week.
