When people think of pesto, the first thing that comes to mind is the classic Genovese pesto with basil and pine nuts. But pesto can also be put together in a completely different way, for example with coriander.

For a long time, this ancient spice was one of the herbs that were usually only known in Asian dishes and only rarely used in domestic kitchens. In the meantime, however, the herb with its lemon aroma has gained a permanent place in many kitchens and not only gives Asian dishes a very special kick, but also pestos.

If you want to make your own pesto with coriander, you can conjure up something very special in just a few simple steps.

➔ Ingredients

For 6 people you need the following ingredients:

  • 80g coriander leaves (about 1 bunch)
  • 1-2 cloves garlic
  • ½ to 1 chilli, depending on how hot you want
  • Juice from a lime
  • 150g cashew nuts or peanuts
  • 100ml oil (sunflower or sesame)
  • 1 tablespoon of honey
  • S alt

➔ Preparation

❶ Cut the washed and dried coriander leaves into strips and then the garlic into coarse pieces. If you like it extra hot, leave a few seeds of the chili pepper, otherwise remove them completely and cut the pod into rings.

❷ Now put the garlic, chili, lime juice, oil and honey in a blender or blender and coarsely puree these ingredients.

❸ Finally, add the coriander leaves and s alt. Mix the pesto well again until the mass has the desired consistency. If the pesto has become too spicy, you can add a little more lemon juice.

❹ Now put the finished pesto in a bowl or in a screw-top jar with a lid. If you don't want to eat the pesto right away, cover it in the jar with oil and put it tightly closed in the fridge. It lasts there for about 1 week.
