There aren't many fans of beetroot, but those who do love to conjure up fries, chips or a delicious beetroot bread with it. And also: beetroot is not only delicious, but also low in calories. So it may come up on the table more often.
But what if you bought the tubers but don't have time to cook them? Then that's no problem at all, because you don't have to process and eat the tasty vegetables immediately. It is also possible to preserve the red tubers. And you have several options for this.
How to preserve beetroot
» Option 1 - store in the basement:
Beetroot can stay in the fridge for about 14 to 28 days. You can also store freshly harvested beetroot in the cellar. Simply line a wooden box with plastic foil and fill it halfway with moist sand. Then add the vegetables and fill the box up to the brim with sand. In this way, the beetroot can last up to five months at temperatures of around six degrees Celsius.
» Option 2 - freeze:
You can also preserve the delicious vegetables by freezing them. All you have to do is steam the tubers until soft, cut them into small pieces and then place them in containers suitable for freezing. You can also use the tubers to cook a beetroot soup and then freeze it.
» Option 3 - insert:
You can also pickle the beetroot and thus preserve it. A true classic, for example, is pickling in vinegar. To do this, boil the beetroot, cut into slices and layer in mason jars together with a sliced onion. Then cook a broth of 0.5 liters of vinegar, 1 liter of water, 2 tablespoons of s alt and 4 tablespoons of sugar and pour into the glasses. Then close them immediately and put them in the cellar.
