❖ Recipe 1 - Easy Beetroot Soup
Ingredients:
- 3 Leek Sticks
- 1 onion
- 6 beetroots (ready cooked)
- 8 potatoes (medium, diced)
- 1.5 liters of vegetable stock
- 100 grams of crème fraîche
- s alt and pepper to taste
- some oil
Preparation:
Clean the leeks and onions, cut into small pieces and sauté in heated oil. Then pour the broth over the whole thing, add the beetroot and the diced potatoes and cook everything for about half an hour. Finally add the crème fraîche and season the soup with s alt and pepper.
❖ Recipe 2 - Beetroot Soup with Coconut Milk
Ingredients:
- 2 beetroots (peeled and cut into pieces)
- 1/4 liter vegetable broth
- 1/2 can of coconut milk
- s alt and pepper to taste
- Crème fraîche to taste
- 1 bunch dill (chopped)
Preparation:
First, cook the finely chopped beetroot in the broth until soft. Then puree the vegetables and pour in the coconut milk. Then season the soup to taste with s alt, pepper, dill and crème fraîche.

Ingredients:
- 2 medium-sized beetroot
- 4 cups of water
- 2 cans of mixed beans
- 1/2 can of coconut milk
- S alt and chili powder to taste
Preparation:
Peel the beets,Cut into very small cubes and place in a saucepan. Then bring the vegetables to a boil together with the water and continue cooking for about ten minutes.
