Probably the most famous woodruff dish is jelly. You can do this yourself very easily and without much effort. You can find detailed instructions here.

When you think of woodruff, you obviously have the poisonous green jelly in mind. There are really only two factors here - you either like them or you don't like them. Children especially love this wobbly dish, but adults also enjoy the delicious dessert. If you don't want to use ready-made products for the famous jello, you can make the dish yourself without much effort.

Green Jell-O: Recipe and Instructions

For 4 people you need woodruff pudding:

  • 1 bunch of woodruff
  • 500ml water
  • 1-2 tablespoons lemon juice
  • 60g sugar
  • green food coloring
  • 40g cornstarch

Preparation

1 Wash the woodruff and then dry it thoroughly. Then spread it out on a kitchen towel to dry for two days so that it can develop its aroma.

2 Now put the dried woodruff in a saucepan and add 450 ml of water. Bring the whole thing to a boil. Once the water has boiled, remove the pot and let the contents steep for 5 to 10 minutes. After this brewing time, take out the woodruff leaves, add sugar and lemon juice, as well as the green food coloring and bring the liquid to the boil again.

3 Mix the cornstarch with the remaining 50 ml water in a bowl and add it to the boiling woodruff-sugar mixture. The mass is boiled again and then poured into dessert bowls or a large bowl. Once the pudding has cooled, you can serve it. Either pure or with whipped cream or vanilla sauce.

You don't have to add the green food coloring, it only provides the classic green color, because without color the pudding is not green, but rather light.

If you want to make a classic jelly like you used to from your childhood, use cornstarch 6 insteadSheet of gelatine or agar-agar for vegetarians.

Proceed in the same way as for the pudding recipe. Let the water-woodruff-sugar mixture steep and soak the gelatine leaves in cold water.

Then heat the dripping wet gelatine in a saucepan until it has completely dissolved and mix 3 tablespoons of the woodruff mixture with the soaked gelatine. Only then do you put the gelatine completely into the woodruff pot and fill the jelly mixture into a bowl or bowls. If kept cool, the jelly will be cold and set after about 4 hours.
