Tomatoes are among the most popular vegetables grown in German hobby gardens. If the harvest is very plentiful, the question inevitably arises as to how the tomatoes can be used. Many collect the fruit and make tomato ketchup themselves, a very tasty and he althy alternative to supermarket ketchup. Another very popular use variant is tomato soup. It's easy to cook - but everyone makes it differently.Here we present a simple basic recipe that you can refine and change as you wish.
Tomato Soup Recipe
For 2 people you need:
- 1 kilogram of tomatoes
- 3 sprigs of thyme
- 1 small onion
- 1 tablespoon tomato paste
- a little butter or oil
- 75 grams of whipped cream
- S alt
- pepper
Step 1: Clean and skin the tomatoes
Before you can make a soup out of the tomatoes, they have to be cleaned, i.e. washed thoroughly. Now the tomatoes need to be skinned. To do this, cut a cross at the base of the stem. Then place the tomatoes in boiling water and wait a moment. After a few minutes, the skin peels off. Remove the tomatoes and place them in ice water for a moment. This keeps your fruit crisp and fresh. Now just peel off the skin with a knife and you're done!
Step 2: Dice tomatoes and onion
After separating the tomatoes from the skin, the flesh is cut into small cubes and the stalk discarded. Now you can also peel and chop the onion. Meanwhile, rinse the sprigs of thyme briefly under cold water and then place them on a kitchen towel to dry.
Step 3: Fry the onions and tomatoes
Put a dash of oil or a little butter in a saucepan and sauté the onions until translucent. Then add the tomatoes and a tablespoon of tomato paste and let the mixture boil up briefly.
Step 4: Add spices
Now add the sprigs of thyme, some s alt and pepper and 125 ml water to the soup. Let the mixture cook over medium heat for about 15 minutes.
Step 5: Sieve the soup
If you like, you can now strain the soup through a fine sieve to get rid of the pieces. Now you can season with some sugar and s alt.
Step 6: Whip the cream and fold in
You can add a little more cream to give the soup a creamy consistency. However, you should beat them stiff in advance and only then add them to the tomato soup. Let them boil again while stirring. The tomato soup is ready!
It was easy, wasn't it? Tomato soup is also very delicious with homemade croutons. Simply cut off the crust from the toast and cut the rest into small cubes. Fry the cubes in a pan and serve warm.
