Harvest herbs before flowering
But the herbs are particularly tasty if you harvest them right before they bloom. The leaves are also particularly soft, because they get harder after flowering.
Cut off old shoots
Old shoots should be cut off at ground level. This delays the next flowering, as the plant has to produce new shoots first.

The flowers themselves can be eaten with most herbs. Try it. The flowers often have a sweet aroma, which is a completely different taste experience.
As already mentioned, herbs can be harvested all year round, but harvesting in bad weather is ideal. If there is a longer period of fine weather, then you should do without it and wait a little longer, because during this time the herbs grow faster, which means that the aroma becomes even more intense.
