Some call them snow peas, others sugar snap peas and others sugar snap peas. What you call them doesn't matter. One thing is certain: they taste great as a soup.
Fresh, crunchy and sweet, they can be eaten with the casing and are often part of stir-fry dishes. Sugar snaps also taste good in rice dishes, stews and stir-fries. - a handful of snow peas
- 300 g baby peas
- 3 tablespoons butter
- 1/2 clove of garlic
- 750 ml Vegetable Soup
- 250 ml cream
- 1 pinch nutmeg
- 4 tbsp white bread cubes
- 2 peeled shallots
- S alt
- white pepper
Preparation:
Step 1:
First, peel and chop the shallots and garlic clove. Then put the peas, shallots and garlic in a saucepan with 2 tablespoons of butter. The whole thing should sweat a bit. Then pour in the vegetable soup and slowly add the cream. Season with s alt, pepper and nutmeg and simmer for a total of five minutes.
Step 2:
In the meantime, cut the snow peas into fine strips and blanch briefly in s alted water. Also roast the white bread cubes in a pan with 1 tablespoon of butter until golden brown.
Step 3:
Then puree the soup with a blender and pass through a sieve. Froth the whole thing again with a blender and pour into suitable soup bowls. Now add the sugar snap peas to the soup and sprinkle with the golden-brown bread croutons. Bon appetit.
