Rösti are a popular national dish in Switzerland. The golden brown and crispy "Taler" are served as a main course or as a side dish.
They are similar to the potato pancakes known in this country. However, the Original Rösti are made exclusively from potatoes.
Light, low-calorie hash browns can also be made from zucchini and are commonly called zucchini hash browns. These crunchy vegetable pancakes are not only appreciated by vegetarians.
Zucchini Rösti - 2 delicious recipe ideas
1. The classic variant
The classic Rösti is made from grated potatoes. Potatoes can also be used for zucchini rösti. The aroma of the potatoes harmonizes perfectly with the rather tasteless zucchini.

- 300 g courgettes
- 300 g potatoes
- 1 onion
- 1 to 2 cloves of garlic
- 1 egg
- 1 - 2 tablespoons flour
- S alt, pepper, nutmeg, paprika powder
- fresh herbs to taste

1 Grate the courgettes coarsely and lightly s alt them. Roughly grate the peeled potatoes into another bowl and let them rest for about 10 minutes so that the starch separates. Then squeeze the liquid out of the zucchini and potatoes. You should definitely pay attention to this, otherwise the rösti will fall apart and splatter when roasting.
2 Now add the spices, flour, egg and finely chopped onion and minced garlic to the zucchini and potato mixture. The whole thing is thoroughly mixed. Process the finished Rösti mass immediately afterwards. Because the longer the rosti dough stands, the more starch and liquid will be released and the rosti will fall apart during baking.
3 Heat oil or clarified butter in a pan and add portions of the hash browns to the heated oil using a tablespoon. Press the dough down a little with the spoon. Now bake your zucchini rosti until golden brown on both sides. This takes about 6 to 8minutes. Finally, drain the golden-brown thalers on a plate lined with a kitchen towel before serving.
2. The hearty variantThe delicious pancakes can also be prepared without potatoes. Seasoned heartily with fresh herbs or grated cheese, they are a pleasure.

- 500 g courgettes
- 2 tablespoons flour
- 1 to 2 eggs
- 2 to 3 tablespoons of grated cheese (mountain cheese gives a hearty taste, Gouda has a mild taste)
- 2 - 3 finely chopped spring onions
- Herbs (parsley, dill, chives)
- s alt, pepper

1 Zucchini is roughly grated again and mixed with a little s alt. Let them rest for 10 minutes and then squeeze out the liquid that has accumulated in your zucchini.
2 In another bowl, mix eggs with cheese, spring onions and herbs. Add the flour and grated zucchini. Before mixing thoroughly, season with s alt and pepper.
3 Finally, the rösti are baked in portions in a pan with hot oil or clarified butter until golden brown.
