You don't necessarily have to buy tomato passata. You can strain your tomatoes yourself in just a few steps. We'll show you how.
Tomatoes offer a variety of preparation options and are particularly popular in Mediterranean cuisine. For some dishes it is advisable to strain the fruit beforehand. If you want to cook a sauce or a soup, for example, tomatoes have a much more pleasant consistency after straining and are also easier to work with.
Tip: As you probably know, tomatoes contain many minerals and vitamins (nutrition table here). These are not lost through the straining, so that you can still benefit from the he althy vegetables after this processing.
You can buy tomato passata in any supermarket, but they don't have the fruity aroma of tomatoes from your own garden. Give it a try!
Pass tomatoes through a sieve
➤ Step 1:
First you need to skin the tomatoes. The easiest way to do this is to place them in boiling water for a few minutes after scoring the skin. You should then let the tomatoes cool under cold water. Now the skin can easily be peeled off with a knife.
➤ Step 2:
Now take a simple household sieve and put in the peeled tomatoes. Place a bowl under the sieve. Then squeeze the tomatoes in the sieve so that a fine mass ends up in the bowl.
➤ Step 3:
If you don't need the tomato passata right away, you can preserve them by boiling them down. (Reading tip: Boiling tomatoes - 3 recipe variants) You can also fill the strained tomatoes into small containers and freeze them. So you always have something ready for a delicious tomato sauce.
Passée tomatoes from the Passiermühle
Our grandmothers used to use a device called "Flotte Lotte" to strain their tomatoes. In some households such metal food mills are still (or again) available. Of course, this makes passing much faster and easier.
Forthe device has different attachments. Here you simply turn the crank like in a mill. The skinned tomatoes are pressed through the integrated sieve and finely strained tomatoes come out. All you have to do is place a jar underneath to catch them.
Tip: These food mills can be used in a variety of ways in the kitchen - for example to make apple sauce.
