  • 2 small to medium-sized courgettes
  • 250 g flour
  • 1 packet of dry yeast or half a cube of fresh yeast
  • s alt, pepper
  • 200 ml vegetable stock
  • 1 egg
  • 4 tablespoons olive oil
  • 1 teaspoon dried herbs, e.g. oregano, basil
  • 1 teaspoon fresh rosemary and chopped
  • 1 pinch chili flakes
  • 250 g feta, diced

➥Preparation

1Roughly grate the zucchini either by hand or in a food processor. Then they are steamed in a pan with a little butter for three minutes. Add s alt and pepper and allow the steamed zucchini to cool slightly.

2For the dough, mix flour with yeast and a pinch of sugar in a large bowl. Whisk the vegetable broth with the egg, herbs, oil and chili. After that, pour this mixture into the bowl with the flour. Now the grated and steamed courgettes are added and mixed thoroughly.

3Finally, lift the feta cubes underneath and fill this dough into a greased and floured loaf tin. Just smooth out the bread dough and bake it at 180°C (convection oven 160°C) for about 55 minutes until golden brown.

The finished zucchini bread is cooled on a wire rack. This bread tastes best fresh and goes well with salads, grilled meat and herb butter.
