Basic Recipe
There is a basic recipe for a typical tomato juice, which takes a certain amount of time, but it creates the perfect starting point. The basic recipe requires the following ingredients:
- 1 kg of tomatoes
- Celery
- a little olive oil
- S alt
- pepper
➛ Step 1: Skin the tomatoes
To prepare, put water in a saucepan and bring to a boil on the stove. Then score the skin of the tomatoes crosswise with a knife and put them in the water. Let them steep for about five minutes. As soon as the shell separates, you can remove the pot from the heat and drain the water. Now you need to remove the skin and the stalk of the tomatoes.
➛ Step 2: Simmer the tomatoes
Cut the tomatoes into small pieces and simmer them in the saucepan over low heat. Add s alt and pepper and a dash of olive oil. Cut the celery into small pieces and add them to the pot as well. Once the tomatoes have broken down and the tomato juice comes out, other ingredients can be added to the pot. Ten minutes after the tomatoes have broken down, you should remove the pot from the heat.

After they have cooled, the vegetables are so soft that they can be pushed through a fine sieve with a spoon. The tomato juice should cool completely before consumption.
Variations
In order to fully exploit the taste of the tomato juice, it is possible to add other ingredients to the pot during preparation. This step takes placeusually within the last ten minutes while the pot is still on the stove and simmering.Various vegetables, spices or herbs are suitable for this:
If you would like to add other vegetables to your tomato juice, we recommend carrots or kohlrabi. But you can also try other types of vegetables.Do you like it spicy? Then you can spice up your juice with Tabasco or mustard. Soy sauce also gives it an interesting flavor. If you want to give your tomato juice an Italian touch, you can flavor it with basil or oregano.It is always important to ensure that the amount of vegetables or spices added does not spoil the basic taste. The juice should still taste like tomatoes, otherwise it will turn into vegetable juice.
With the spices, a teaspoon is usually enough to refine the tomato juice.
Base for tomato sauce
You can also use the same basic recipe to make a tomato sauce. For this purpose, the mass is not passed through a sieve, but processed with the hand blender. The juice thickens a bit and is therefore a good basis for further processing.
Durability
If you prepare the tomato juice in advance, you should ensure that it is filled and sealed while hot. Clean and germ-free glass bottles that are boiled in advance are ideal for this. If the tomato juice is stored in a cool, dark place, it will keep for several months.
