- So that the tomatoes can be easily removed from the skin, they must be prepared. A pot of water is heated until the water boils. The tomatoes are now in the water and stay there for about two minutes. The skin should burst. Now the tomatoes are removed and placed on a plate to cool.
- Then peel off the skin. Be careful not to crush the flesh.
- Now the tomatoes are halved and freed from the seeds and the stalk. Now the pulp can be diced. It is also possible to puree it. That depends on personal taste.
- The tomatoes are now mixed with the pulp of the vanilla bean and the preserving sugar. Squeeze the lemon and add the juice to the tomatoes.
- Let everything steep for a good hour.
- Now the mixture is boiled. It is important that you stir constantly so that nothing burns. Once everything is boiling, leave the pot on the stove for about four minutes to allow the tomato jam to set.
- Finally, the jam is filled into jars. These should be sterile, i.e. washed out with hot water. Put the lid on and turn it upside down. After 10 minutes they can againbe flipped.
- The glasses must be completely cold before they are placed in the refrigerator.
- The tomatoes are washed and quartered and then boiled for ten minutes. Now the skin can be removed. Here, too, it is important to ensure that the skin should burst during cooking.
- Now everything is put into a sieve and pressed through. It can be worked with a fork or a spoon to achieve the finest possible result.
- Now put the liquid in a saucepan and bring it to the boil with the preserving sugar.
- The apples are cut and cleaned and also put into the pot. Add the spices and apple cider vinegar. All together should cook for 50 minutes.
- The liquid is then poured through a sieve again and filled into sterile glasses.
- Peel the tomatoes with a vegetable peeler. But the possibility of briefly cooking the tomatoes, as already mentioned in the first recipe, is also an option.
- The tomatoes are then pureed.
- Pour the mixture into a saucepan and mix in the citric acid and 250 g preserving sugar.
- Boil everything, then stir in the remaining preserving sugar.
- Wash and chop the basil and add to the pot.
- Season with chili, s alt, pepper and ginger to taste.
- All together should now cook for ten minutes.
- The jam in sterile jarsfill and turn upside down for ten minutes.
- Finish cool and keep refrigerated.
