If the tomato harvest is quite plentiful, the tomatoes have to be used somehow. A great idea is to cook your own tomato sauce to eat straight away with pasta etc., or freeze the tomato sauce in portions. The basic recipe for a homemade tomato sauce requires only a few simple steps. We explain how to do it and how to refine the basis even further.
Make tomato sauce yourself - basic recipe
The following ingredients are required for the sauce:
- 800 g ripe tomatoes
- 2 tbsp olive oil
- 1 onion
- 2 garlic cloves
- S alt
- freshly ground pepper

- Wash tomatoes.
- Carry a cross on the skin underneath.
- Place the tomatoes in a saucepan and pour boiling water over them.
- When the skin starts to peel off (usually after two to three minutes), remove the tomatoes from the pot and pour cold water over them.
- Let cool slightly, then peel off the skin and remove the stalk.
- Now cut the flesh into small pieces.
- Dice the garlic and onion. Put the olive oil in a saucepan and sauté the diced onions and garlic until translucent.
- Add the tomato pieces and put the lid on. Stir occasionally and remove the pot from the heat after 15 minutes of simmering.
- Finally, the mass is processed with a blender and the sauce is seasoned with s alt and pepper.
Cook tomato sauce
In order to make the tomato sauce last as long as possible, it is filled into glass bottles or jars after preparation. For preserving, it is necessary to close the container after filling and let it boil in the oven at a temperature of 100 degrees Celsius for about 30 minutes. If you want to refine the standard tomato sauce even further, you'll miss itthem with other ingredients in the course of later processing. Here are six recipe suggestions on how to improve the basic recipe or adapt it to certain dishes.
❶ Tomato and cheese sauce
To do this, add fresh Parmesan or Pecorino cheese to the sauce during preparation and refine it with a dash of fresh olive oil. Frozen or fresh herbs complete the recipe and give the sauce that certain something.❷ Mushroom Tomato Sauce
For this variant, shiitake mushrooms or button mushrooms are suitable, which are first fried together with onions in a pan. Now the tomato sauce is added, and the whole thing is seasoned with parsley at the end.❸ Italian tomato sauce
Fresh rosemary, thyme or sage are fried with a little olive oil. Then the tomato sauce is added. If there are twigs in the herbs, these are removed before serving, while the sage leaves can be eaten without any problems.❹ Vegetable tomato sauce
Zucchini, peppers and aubergines are perfect to be processed with a tomato sauce. Beforehand, the vegetables are fried with some fresh garlic. Let the whole thing simmer together with the tomato sauce for about ten minutes and then serve.❺ Bolognese Sauce
First, onions are sautéed in a pan with a little olive oil. Then add 250 grams of minced meat, which is now seared. Then add the tomato sauce and let it simmer for another five minutes over low heat.❻ Fiery tomato sauce
