When it comes to dandelion, opinions are often divided as to whether it can be called a weed at all, or whether its usefulness for making syrup or jelly means it can be described as a garden fruit. Especially since this bright yellow honey substitute positively stimulates the human metabolism and, above all, can help to relieve severe colds.

Recipe 1 - Dandelion Syrup
Only the flower heads are required for the production of the dandelion syrup. These must be harvested in bright sunshine and thus well dried. Then remove the flower heads from the flower holder as carefully as possible.Now boil 100 grams of fresh dandelion blossoms in approx. 0.75 liters of water for a few minutes. Sieve the petals out of the liquid, add 1 kilogram of brown sugar and season with lemon juice. Then let the liquid continue to simmer until it has a syrupy consistency - this takes about 45 to 60 minutes. As soon as threads form in the dandelion syrup, you can pour it into sterilized jars. After cooling it is ready to eat.
By the way: Dandelion syrup can be stored in a dark, cool cellar room for up to a year.
Recipe 2 - Dandelion Jelly
Boil 300 grams of fresh dandelion blossoms in a pot with about 1.5 liters of water for a few minutes and then leave covered overnight. The next morning you should strain the flowers out of the liquid.You can then cook a sweet-tasting jelly from the liquid. You will need a pack of preserving sugar 2:1 (approx. 1 kilogram). You can even taste the sweet dandelion jelly with a little lemon juice. Then you have to fill the finished jelly into sterilized jam jars and let them cool down completely.
