The blooming lavender fields in Provence have not only fascinated the French for centuries. In Germany, too, small fields of lavender are blooming in more and more gardens.

In France there are countless products based around the purple flowers with their aromatic scent. The palette ranges from lavender soap and perfume to lavender biscuits. Lavender jam is also a must on every breakfast table in France. This delicious jam is often served with croissants.

For those who love the taste and smell of lavender and want to make their own lavender jam, here are some delicious sweet spread recipes with a French twist.
1

Lavender Strawberry Jam

Lavender is usually combined with fruit to achieve a harmonious blend. Pure lavender jam is often too dominant and is therefore perceived by many as rather unpleasant.

Strawberries and lavender harmonize best with each other and therefore this classic should not be missing here.

➲ Ingredients:

For about 5 - 6 jars of lavender strawberry jam you will need:

  • 1 kg strawberries
  • Juice from 1-2 lemons
  • 2 tablespoons dried lavender
  • 500 g preserving sugar 2:1

➲ Preparation:

❶ First of all you have to wash and clean the strawberries. Depending on whether you want fine or chunky jam, the strawberries must now be pureed or quartered.

❷ Then finely chop the lavender blossoms and put them in a large saucepan with the strawberries and jam sugar. Now let this mixture boil. From the moment it boils, let the mass continue to simmer for four minutes. It is best to cover all around with a cloth.

❸ Finally, add the lemon juice, stir once and pour the mixture into clean, hot rinsed glasses.

❹ Close immediately and turn upside down. After about 5 minutes you can turn the glasses upside down again.

Apricot Lavender Jam

Apricots also form an interesting taste experience in combination with lavender. For this you need:

  • 1 kg apricots
  • Juice from 1-2 lemons
  • 2 tablespoons dried lavender
  • 500 g preserving sugar 2:1

➲ Preparation:

❶ To start, the apricots must be washed, pitted and quartered. The fruits are then placed in a saucepan with the preserving sugar and lemon juice and left to rest overnight.

❷ The next day, puree the fruit and add the finely chopped lavender. Now bring this mass to the boil and then let it simmer for another four minutes.

❸ Now the hot jam can be poured into clean jars that have been rinsed with hot water.

» My tip: Peaches and nectarines harmonize perfectly with lavender. Just try it and enjoy. Bon appétit!!!
