Ingredients for 4 people

  • 1 white onion
  • 1 red onion
  • 500 ml red wine vinegar
  • 150 ml water
  • 1 bay leaf
  • 2 tablespoons sugar
  • 1 tablespoon juniper berries
  • 1 teaspoon black peppercorns
  • 1 teaspoon yellow mustard seeds
  • 1 teaspoon s alt

Preparation

➣ Step 1:
In a large saucepan bring the red wine vinegar, water, sugar and s alt to a boil. Add the bay leaf, peppercorns, juniper berries and mustard seeds. Boil briefly again. Then season the onion broth with s alt and sugar.

Put the onion rings in the broth and bring to the boil again, remove from the stove and let everything cool down. Stored in airtight jars, the onion rings can be stored in the refrigerator for up to a week.

» Tip: The onions are still a bit crisp and al dente when prepared this way. If you don't want to do this, you can also cook them to your own taste in about eight minutes over low heat.

  • 100 ml white wine
  • 3 bunches of spring onions

  • 50 g grated parmesan cheese

Scald the shallots with boiling water, then drain and cool with cold water. Then remove the shallots from the skin and sauté them in olive oil while stirring. Pour in the vegetable stock and white wine and simmer for about 10 minutes.
